This time of year is always busy for us and for our hotels.  It's the time of year people like to book their winter holidays. Turtle Season at Jamaica Inn

10/10/17

It’s official, the turtle release season is in full swing at Jamaica Inn! Every year during the months of August to October Jamaica Inn’s guests are able to witness Hawksbill Turtle releases on property or at a nearby beach in Oracabessa. As you can see in the video, the beach has become a popular nesting ground for the Hawksbill mother turtles that instinctively travel thousands of miles to lay eggs on their beach.

During the hot summer months, Mother Hawksbill turtles lay egg clusters in nests that hatch approximately 60 days after the eggs are nested, dependent on the temperature of the sand. The Jamaica Inn team has already counted three nests since the start of the season and look forward to many more. Each year their presence prevents the onset of birds, rats and other predators that may try to prevent the baby turtles’ progress to the sea. Guests are able to play a crucial role in facilitating the baby hatchling’s journey to the ocean while witnessing an event others rarely get the chance to see.

The hotel's on-site turtle expert, Mel, is able to direct us to the exact nesting locations on our beach, keeping a watchful eye over the nest as the babies hatch. Guests are able to learn about the turtles, their nesting habits and view the baby turtles in their plight to the ocean. We’re excited to share this amazing experience with our guests and look forward to a successful season of turtle hatching .

There is a high chance that guests who stay at the hotel now will be able to see a hatching on site or at a nearby beach. Hatchings usually occur in the nights, with the baby turtles following their instincts to the sea. Guests have been known to request wake up calls from the front desk staff in the event a hatching occurs in the night.

East Winds, Saint Lucia Artist-in-Residence Week

11/08/17

East Winds, Saint Lucia is making the most of their exclusive, cottage-style resort, and will be welcoming Artist-in-Residence, Brin Edwards, for a week 24th – 27th October 2017. 

Brin Edwards will be in residence to launch their new in-room bird, plant and fish guide and our guests will be welcome to join Brin and talk to him about the project.

About the Artist: Brin is a member of the UK’s SWLA Society of Wildlife Artists and has been involved in the organisation for many years. He works mainly in oils and concentrates mostly on birds as wildlife subjects. He is particularly interested in the effects of light, often using light as the starting point for the paintings – the birds then follow.

“I strongly believe that such images deliver from a distance. By which I mean step back from the painting and the colours and tones begin to work as a whole, look close and you’ll find less not more. To say much with few marks and gestures is the aim and driving force behind my work.“

The best time to visit the Caribbean is generally considered to be December to April, when it’s slightly cooler, drier and less humid, and travellers tend to visit to escape the northern winter.

Essential Detail 2017 Roadshow

It's that time of year again when our wonderful hoteliers get together and join us for a UK tour visiting luxury travel agents and tour operators. This year we will be celebrating the launch of our publication ‘It’s all about the Hotel’

The week will take place on Monday 22nd May.  We start in Bristol, where we have not been for some time so we are delighted to have the chance to see luxury travel agents in the area.  The evening will be at the Berwick Lodge from 6pm and will include delicious food and drinks, a chance to meet all the hotel owners and managers and everyone will have a chance to take part in a fabulous prize draw.

On Tuesday 23rd May we will be at the brand-new Oddfellows on the Park, Cheadle, Greater Manchester. The evening will be similar to Monday evening.

Guest Experiences at East Winds, Saint Lucia

East Winds is an intimate exclusive-inclusive boutique hotel on the beautiful island of Saint Lucia

Their all-inclusive includes not only all food and drinks (see our property manuals for full details) but guests can also take advantage of their Guest Experiences programme exclusively for East Winds guests only.  Most are included in their stay, some come with a small supplement payable locally.

Take a guided walk through the area surrounding our lovely resort property.  Bring a bottle of water along.  Meet Simeon at Juliana’s Boutique. 

Breathtaking Views Tour, 11:00am – 1:30pm

Visit the lush gardens and the exceptional orchid house of Stony Hill, one of Saint Lucia’s most beautiful, yet undiscovered attractions.  Here you will enjoy locally made cakes, a cooling drink and the panoramic view over Rodney Bay Marina.  Next, move on to the town of Gros- Islet, home of Pantime Steel Orchestra for an interactive pan experience.  Learn how to play the steel pan and about the history of the pan.

Yoga with Jill, 8:00 – 9:00am

Join Jill at our yoga studio for her morning yoga class.

Morne Coubaril Estate 9.30am – 4.30pm

Explore one of St. Lucia’s historical Plantation in Soufriere.  Tour departs the hotel at 9.30 am a drives along the East coast to Moule-a-Chique with a panoramic view of Vieux Fort town. Next we move to Morne Coubaril estate.  On tour you will learn how coconut is open, roasted and sent to be processed into margarine, soap, oil and also cocoa into chocolate.

Learn something new this afternoon with local Chefs Harry or Linton. Today’s class will include samples for all to try.  Meet at the restaurant buffet area this afternoon.

Thursday

Dolphin and Whale Watching 8.30am – 12.30pm

Dolphin and Whale watching is a 4 hour adventure trip, seeking to see pods of Dolphins and the largest mammals in their natural habitat.  Although not guaranteed sighting the whales, but the chance of seeing dolphins are high. On our return there’s a brief stop at Marigot Bay and back to the hotel in time for lunch.

Garden Tour, 2:00 – 3:00pm

Tour the gardens at East Winds with the resort’s Head Gardener this afternoon for an in depth look at the many different species of plant life that share the resort with you.  Meet at Reception.

Exclusive Sunset Cruise, 4:00pm – 7:00pm

Enjoy breathtaking views from the serenity of the Caribbean Sea while enjoying great company, your favourite cocktail, and a selection of appetizers prepared specially this evening by Chef Tomislav on our “Exclusive for East Winds” Sunset Cruise aboard Southern Breeze. Your shuttle to Rodney Bay departs Reception at 4:30pm and returns to the resort by 7:30pm.  Limited spots available and minimum numbers required.

Curtain Bluff has an Amazing Kids Programme! 

 

Finding a resort that works for all members of a family is not always so easy. Yet Curtain Bluff  seems to have cracked the code…so much so that many of their families return year after year, quickly turning their annual holiday into a family tradition. Centered around a shaded “basecamp” down on the calm-water beach, activities range from chocolate making to crab races, mocktail lessons at the bar to designing wind chimes.

The resort is quiet and self-contained, with all the activities included in the room rate. Which means that you and your kids can sail Hobie Cats and Windsurfers, dive, water-ski, go on snorkeling trips, and play tennis, basketball, squash, bocce and shuffleboard as often as you want, at no extra cost. There is a shaded sandbox with full Jungle Gym for the little ones. Curtain Bluff has a Games Room designed specifically for our younger guests and equipped with board games, computers (loaded with all the latest video games) and a wide-screen TV (with cable and DVD player) on which we show age-sensitive films.

For our youngest guests, early dinners are served outside on the Tamarind Terrace at 6:00 PM. Babysitters (arranged for an extra charge) can then look after children back in the room, freeing up parents for leisurely dinners and dancing to our nightly live bands.

Play It Again Sam!

For the first time, Jamaica Inn will be featuring an in house choir consisting of their talented staff singers. Their fabulous carolers will be performing at 7:00pm on Christmas Eve for 1 hour to get our guests in the holiday spirit.

Recently the Jamaica Inn team lovingly decoratied the Christmas tree in the library. The traditional Christmas plant or poinsettias are also used as decorations throughout the hotel.

On Christmas day guests will be served eggnog on the beach instead of the usual planters punch/blended fruit punch. In the afternoon complimentary tea time will be available followed by a lively marching band in the gardens. On Christmas night there will be a traditional Christmas Dinner planned with all the usual trimmings on the menu.

During the season, Sorrel is served with or without our famous Jamaican Rum. This is perhaps the most traditional drink at this time of year.

New Years Eve at the Inn is always quite a production. This Years celebration is going to be one to remember. Titled Play it Again Sam at Jamaica Inn we start with a Champagne Cocktail Party at Rick’s Café located on the hotels East Wing Terrace from 8:00pm – 9:00pm followed by dinner under the stars on the Beach… The dress code is “Casablanca Formal”. Their lavish dinner items will be set up on a wonderful display around the main pool. An example of our set up includes a Seafood Station that has Oysters, Poached Lobster, Alaskan King Crab, Snow Crab Claws, Smoked Salmon, Smoked Marlin & Peppered Shrimp and a Carving Station with Roast Beef, Whole Fish & Turkey. These dinner items mentioned are subject to change.

The cost to participate is US $260.00per person (inclusive of tax & service). If you are on a meal plan that includes dinner then US $73 will be deducted from the New Years participation cost .

During East Winds’ closure in September the three Ocean Front Rooms were completely renovated with new furniture, gorgeous fabrics and stylish new bathrooms.

Bequia Beach Hotel on the beautiful island of Bequia, has two new senior recruits … and we’d like to share the news with you. Earlier this year owner Bengt Mortstedt appointed a Managing Director, Christine Hodder, who is establishing and overseeing a new management structure for all aspects of the hotel operation.

Christine has had a prolific and hugely successful career as an international hotelier with in depth expertise in sales and marketing in this sector. Holding top positions with The Mandarin Hotel Group, Hong Kong, The Millenium Copthorne Group and Four Seasons in Singapore and, plus General Manager roles in London including the Chelsea Hotel in Knightsbridge The Stafford, St James. She brings her versatility to the island of Bequia to oversee and maintain top service levels and the development of this very special property. 


The other exciting news is that Christopher Eastmond has been appointed General Manager and all of us at Essential Detail are delighted to be working with him again at a hotel within our portfolio!

Chris is a luxury brand and boutique specialist who has a comprehensive knowledge of hotel operations. Having most recently held the role of General Manager at Curtain Bluff, Antigua, his other Caribbean projects have included Veranda Resort, Turks & Caicos and Sandy Lane, Barbados. At Bequia Beach he will oversee many further improvements creating new luxury guest experiences … more news to follow.

Artist in Residence Week 21-28 November 2016

East Winds has appointed wildlife artist Brin Edwards to work even more closely with the hotel over the coming year. Brin has been providing original artwork for the hotel’s Christmas cards for many years and hosted a week of painting and activity at the hotel in 2014.

 


He will be in residence again at East Winds week commencing 21 November and guests will have the opportunity to meet with him socially during the week and there will be a relaxed talk one evening with drinks. Guests can join Brin sketching in the gardens with casual teaching sessions in the outdoor pavilion, concentrating on landscapes and botanical subjects in watercolour.

Guests in-house will be invited to join any of these activities during the week and there no supplements for participation.

Brin is also working on illustrating a book on East Winds’ established and simply breath-taking tropical gardens and birdlife, which is being published by the hotel next year.


ABOUT THE ARTIST

Brin is a long standing member of the UK’s SWLA Society of Wildlife Artists and works mainly in oils, concentrating on birds as wildlife subjects. He is particularly interested in the effects of light, often using light as the starting point for the paintings – the birds then follow. “I strongly believe that such images deliver from a distance. By which I mean step back from the painting and the colours and tones begin to work as a whole, look close and you’ll find less not more. To say much with few marks and gestures is the aim and driving force behind my work.”

How to make Chocolate tartellete with Grand Marnier

St Lucia's Chocolate Heritage Month

In honour of the island’s rich history of cocoa production, St Lucia is going cocoa crazy for the month of August. Even the sweetest tooth will be satisfied over the four week celebration as 'sun downers' will be swapped for ‘Choc-tails’ and massages for chocolate-infused spa treatments. 

St Lucia’s chocolate legacy dates back to the thriving cocoa industry of the 1700’s and the island still produces some of the world’s most sought-after chocolate to date. Hotels and resorts are embracing the rich heritage creating inventive chocolate services and amenities as well as hands-on experiences for visitors. Many of St Lucia’s top hotels and restaurants, including East Winds uses native cocoa to create inspired savoury and sweet dishes and spa treatments that are both indulgent and healthy.

The entire island has been involved with choctastic surprises ranging from cocoa plantation tours, bean to bar experiences, specialty tasting menus and money saving offers in all of the resorts. 


How to make East Winds Chocolate tarellete with Gran Marnier

  • Pastry dough Filling (ganache)
  • 600g butter 250g dark chocolate
  • 400g sugar 250g whipping cream
  • 4g salt 70g butter
  • 1 vanilla pod (fresh) 1 oz Grand Marnier
  • 100g ground almonds
  • 1kg soft flour

Method:

-rub in butter and sugar together, add salt, vanilla seed, ground almonds and flour

-when dough is done rest for 20 minutes in the fridge

-roll out the dough to 3mm thickness and cut with a ring cutter

- place the dough in to tartellete moulds and rest 20 minutes in the fridge

-place a clear wrap on the dough and fill the moulds with baking beans

-bake on 180 C° until golden brown

-take out the baking beans and set a side to cool down

-put chocolate, whipping cream and butter in the bowl and melt over the bani- marie

-when mix is melted and well combine take it of the heat and add Grand Marnier

-fill the dough with ganache and rest in the fridge, allowing to set down

-serve cold and garnish with white chocolate or orange segments

Chocolate fondue

1 kg dark chocolate

700g whipping cream

pinch of salt

Method

-place all ingredients in a bowl and melt over the bain-marie

-pure the mixture in chocolate fountain

-use any kind of fruit or sweets to your liking and dip in the fondue

Jamaica Inn has become a popular nesting ground for the Hawksbill mother turtles that instinctively travel thousands of miles to lay eggs on the hotel’s beach. Guests have the amazing opportunity to be a part of an once-in-a-lifetime experience by participating in their turtle release programme and witness a turtle hatching.


During the month of September* it’s pretty much guaranteed that guests will be able to witness the sea turtle hatching either on Jamaica Inn’s beach or nearby Orcabessa Beach – when free return transfers are provided (2 people per room) by the hotel.

14-oz. can light coconut milk
½ cup Arborio rice, rinsed and drained
3 Tbs. sugar
⅛ tsp. salt
1 each Cinnamon stick
½ Fresh mangoes. Diced

Method:

Pour coconut milk into 4-cup measuring cup, and add water until liquid reaches 4 cups. Pour liquid into medium saucepan, and add Arborio rice, sugar, salt and cinnamon stick into saucepan. Bring mixture to a simmer over medium heat, stirring often, and then reduce heat to medium-low. Cook 22 to 25 minutes or until Arborio rice is soft and much of liquid is absorbed, but mixture is still loose. (It will thicken as it cools.) Remove and discard Cinnamon stick.

Serve Pudding warm or chilled, topped with fresh mangoes.

Where will you be watching the Rio 2016 Olympic next month?

Rio 2016 Olympic games starts in less than a month, 5th until 21st August 2016, and the Paralympics 7th until 18th September. 


It doesn't seem that long ago now that we were enjoying the highlights of having it here in London.  We enjoyed a buzz like no other, and a great UK Summer to match… how can we possibly top it at this years Olympics? 

The time zones may also have an impact on how we watch the games too, what with the UK being 4 hours ahead of Rio. So how’s about considering a trip to the Caribbean instead to watch Team GB? The time zone is between 1 hour to 2 hours ahead of Rio depending on the island you visit. 


Imagine, a cocktail in hand, watching the games around the pool on a smart device, or perhaps at the hotel bar with a cool beer?  Jamaica and Grenada to name a few, have a number of world-class athletes you can cheer along, as well as Team GB! 

We saw at the last Olympics, Kirani James won Gold in the mens 400 m.  Jamaica won 12 medals including: Shelly-Ann Fraser-Pryce winning Gold in the Women’s 100 m, and winning Silver with her team in the Women’s 4 x 100 m relay, Usain Bolt winning Gold in the Men’s 100 (now holding the a new World Record), Gold in the Men’s 200m and Gold with his fellow Jamaican athletes in the Men’s 4 x 100 m relay!  

Will the weather be an issue?  Not at all... we have had reports from our hotels that the weather has been betwene 28 - 31 degrees. Here is a video taken this from Jamaica Inn this week to prove it!

With the Tennis season already kicking off, we thought now would be a great time to remind you of the fantastic tennis facilities available at the 5-star, luxury Curtain Bluff hotel on the beautiful island of Antigua.


Very few resorts can claim the quality and beauty of the courts, the tennis program, pros, equipment and events that you find at Curtain Bluff.

Curtain Bluff's Tennis Center has four championship hard courts centered around a Pro Tennis shop an easy lob shot from the sea. All are in impeccable condition and lit for night play. Their three resident pros — Rennie, Nigel and Dillo — are trained in the U.S. to teach aptitudes right up to 5.5 (nearly a pro) and ready at 7:00 AM to take a guest’s challenge, pair guests together for a game, or work on that backhand. Private lessons cost $US 70 per hour. Their enthusiasm and gentle manner is one of the reasons that many of our guests call our tennis program the best in the region.


Tennis Events

Among the many tennis events hosted by the resort, the best known is Antigua Tennis Week, held each spring. Started in 1975 as an island-wide professional tournament, it has evolved over the last 35 years into an international pro-am tennis festival that attracts many of the biggest names in tennis. Their other big annual event is Tennis Challenge Week, held at the hotel each November. Guests join former Davis Cup player, Dick Stockton, for a fun-filled week of tennis, relaxation and parties.

Every year we look forward to our fantastic hoteliers coming from overseas to host with us a number of events around the UK. This year was no exception, it was another fantastic week meeting and greeting likeminded people who love our Caribbean boutique hotels.

This year the event took place at the end of May. We announced our new member of the team, Patricia Charlery-Leon as new head of Product and Marketing, and of course we promoted our lovely new website.

Patricia, Helen, Annette and Cheryl from Essential Detail.


We travelled around Kent, Hampshire, Devon and London visiting as many of the trade as we could.

Special thanks to those who could join us in London for our Tour Operator Awards evening, Tropic Breeze for a special night at Fortnum and Mason, Sand Banks Travel for a fantastic night in Poole, plus all the agents we were able to visit during the day.

Why Kids Love Curtain Bluff!

Our parents both work in the travel business, so we get to go on some pretty cool family trips. But our favorite place is Curtain Bluff, a resort on the south coast of Antigua in the Caribbean. We have been there five times and it keeps getting better.


FUN (LOADS OF IT)

Every day at Curtain Bluff is so much fun. Every day we try to get up early (it’s hard) to play some tennis before breakfast or throw a ball on the beach just outside our room. The rest of the day we do lots of swimming, snorkeling on the reef, waterskiing, tubing, eating with friends, games of Bocce, stand-up-paddleboarding. Last time, the watersports guys taught us how to Windsurf and sail Hobie Cats. Next year I want to try squash. There’s never enough time. That’s why we keep going back.


FREEDOM

The resort is safe and the staff is super friendly. We can roam around the property, doing what we want to do. Our parents don’t mind because they know we are OK and, because Curtain Bluff is fully-inclusive, we don’t have to pay extra for anything that we do.


FOOD

As you can imagine, we get really hungry. But that’s OK because, even though we are picky eaters, there’s always plenty of delicious food. The little kids get to eat dinner early. There is a restaurant right on the beach and live music up at the Tamarind Tree. It’s a bit of a shock when we get back home and have to eat normal food again.


FRIENDS

There is something about Curtain Bluff that makes it easy to make friends. We meet them on the snorkel boat, on the beach, or in the Games Room. Sometimes we recognize kids from past visits and between each trip we always text each other to make sure we plan our next trip for the same time.


FOOTBALL

We Americans call it soccer and in Antigua they call it football, but it’s the same game. We have a tradition. Every time we visit we gather up all the soccer-playing kids at the resort and challenge the kids team at the local primary school. Boy do those kids know how to play!

A Classic Breakfast Recipe from Jamaica Inn

Jamaica Inn asked Executive Sous Chef Derrick to give a recipe from one of the most popular and delicious breakfasts, Smoked Salmon Eggs Benedict!


Many guests love this dish at Jamaica Inn as it is a twist on the classic Eggs Benedict with the addition of the smoked salmon, but the Hollandaise sauce is served on the side, so you control how much sauce if any you want to add – this is a brilliant way to serve up this lovely and classic breakfast dish! Chef also highlighted that the brioche is home-made each day at the hotel.


Recipe for A Classic Smoked Salmon Eggs Benedict (serves one)

Two Poached Eggs

Slices of Smoked Salmon (you can also use Smoked Marlin!)

Home-Made Jamaica Inn Brioche (you can use a Classic English Muffin for same effect)

Hollandaise Sauce or A Subtle Herb Sour Cream Sauce (which is what Chef uses for this dish.)

 – To Poach an egg perfectly, bring a large pot of water to the point that the water is simmering, not boiling.

 – Add 1/4 cup of White Vinegar

 – Crack each egg gently into the water, or one egg at a time, for three minutes – then transfer to a dish with a paper towel until ready to assemble.

 –  Chef also served this dish with a wonderful herb sour cream sauce – simply made. Use fresh chopped herbs that you have on hand and sauté in pan for a few minutes with olive oil. Add slowly a half a cup of heavy cream to the herb mixture as well as salt and pepper. Cook on low heat until the mixture reduces, this is enough for one serving.

Assemble starting with two pieces of Brioche or toasted English Muffins – smoked salmon – poached eggs and sauce drizzled over or on side, can also add a few capers, chopped chives or onions! Enjoy!

Guest Chefs, Shorne Benjamin January 2016. 

Shorne was originally from Saint Lucia, now resident in New York City. His professional career catapulted after graduating from the prestigious French Culinary Institute, New York. He has since worked alongside renowned Master Chef Jean George at the popular ABC Restaurant, NYC; alongside James Jermyn at the award-winning restaurant Maloney & Porcelli and at the well-known Lower East Side NYC contemporary restaurant Falai. These experiences allowed him to explore and expand his innate culinary gifts and each helped to form the vision to establish his own identity in the dynamic realm of culinary artistry.

 His career highlights also include being featured at the Annual “Taste of the Caribbean” festival in Montreal, Canada, where he presented 5-star culinary creations. In addition, Chef Shorne has previously served as Executive Chef for the Annual Rum and Rhythm Benefit hosted by the Caribbean Tourism Organization in New York.

 Last year Chef Shorne had the privilege to represent St. Lucia in the 11th International Iron Chef Competition in Toronto, Canada.

Barman Sebert has been working with Jamaica Inn since 1982, and put together this delicious daiquiri. Serbert is known for his wonderful cocktails, and many repeat guests find Sebert as soon as they check in to see what new cocktail he is making. Sebert loves making all cocktails: the classics and the new ones that have been added to the repertoire. You can find Sebert at The Main Bar from noon to about 6 p.m. each day.

Jamaica Inn suggests making this festive cocktail for your next holiday party with their recipe below. And, next time you are at the Inn, Sebert can mix this refreshing drink for you!

Raspberry Classic Daiquiri
(serves one)

One ounce of Raspberry Liquor (we used Chambord)
1/2 ounce of light rum (we used Appleton)
1/2 ounce of fresh lime juice
Simple syrup to taste
Ice
Shake in a martini shaker and serve in a chilled martini glass. Garnish with an orange slice or a cherry.

Sea turtles range in size from about 40 kg (adult ridley turtles) to nearly 1,000 kg in the case of an adult male leatherback.  They are slow-growing, late-maturing, and long-lived with naturally high rates of egg and young juvenile mortality and low rates of adult mortality.  No one knows for certain how long sea turtles live, but field studies demonstrate that they require 12 to 40 or more years, depending on the species, to reach adulthood. 

Sea turtles, like all reptiles, have lungs and must come to the surface regularly to breathe air.  All sea turtles are accomplished divers, with leatherbacks able to reach depths of 4000 ft or more.  With few exceptions, the only time a sea turtle leaves the ocean is to lay eggs.  During breeding years, adults depart their feeding grounds and migrate hundreds (sometimes thousands) of kilometers to mating grounds and nesting beaches.

An adult female may nest for two decades or more under natural circumstances.  Eighty to 200 or more eggs are generally laid in each nest, 2-6 clutches of eggs are generally produced per gravid female per year (but leatherbacks have been known to nest 12 or more times in a single season!), and females return to their nesting grounds to lay eggs at 2-5 year intervals.  After 50-65 days (on average) of incubation, during which time ambient temperature plays a significant role in determining hatchling gender, the tiny turtles emerge at the surface, orient to the sea, and engage in a swim frenzy toward oceanic convergence zones that will offer food and shelter during their early years.

Young juveniles (with the exception of the leatherback) eventually return to coastal Caribbean waters, assuming their characteristic diets, and may travel significant distances through multiple political jurisdictions during the decade(s) leading to sexual maturity.  At maturity, adult females instinctively return to the general area where they were born, the signature of their natal coastline indelibly marked in their genetic code.  Mothers pass the code to their daughters, who will repeat the cycle as long as the natal beach provides suitable habitat.

Sea turtles may produce several thousand eggs in a lifetime, but not all of these will hatch:  some will be infertile, some will be lost to erosion or eaten by predators, and others will be collected for human consumption, often illegally.  Hatchlings are eaten in large numbers by predators; young juveniles, too, face many oceanic dangers (predators, pollution, fishing nets).  An adult has few natural predators.  An estimated one egg in 1,000 will produce an adult turtle.

During non-breeding seasons, adult leatherback turtles travel extensively on the high seas in search of jellyfish and related prey.  Loggerheads and ridleys are omnivores, consuming mollusks, crabs, jellyfish and other invertebrates; fishes (often associated with fisheries bycatch) and seaweeds are also eaten.  The green turtle is an herbivore, preferring to graze in seagrass meadows and on various species of algae in tropical coastal waters.  Hawksbills specialize on coral reef sponges and other invertebrates.

Shorne was originally from Saint Lucia, now resident in New York City. His professional career catapulted after graduating from the prestigious French Culinary Institute, New York. He has since worked alongside renowned Master Chef Jean George at the popular ABC Restaurant, NYC; alongside James Jermyn at the award-winning restaurant Maloney & Porcelli and at the well-known Lower East Side NYC contemporary restaurant Falai. These experiences allowed him to explore and expand his innate culinary gifts and each helped to form the vision to establish his own identity in the dynamic realm of culinary artistry.

His career highlights also include being featured at the Annual “Taste of the Caribbean” festival in Montreal, Canada, where he presented 5-star culinary creations alongside mentor and award-winning Chef Theo Gumbs (USVI). In addition, Chef Shorne has previously served as Executive Chef for the Annual Rum and Rhythm Benefit hosted by the Caribbean Tourism Organization in New York.

Last year Chef Shorne had the privilege to represent St. Lucia in the 11th International Iron Chef Competition in Toronto, Canada alongside Chef Digby Stridion (US Virgin Islands Culinary Ambassador)."

Inner peace found at Jamaica Inn!

Finding Inner Peace at Jamaica Inn!

Jamaica Inn recently held their Second Annual Inner Peace in Paradise Yoga Retreat, and with the yoga, excursions and food, the event was a great success!

Checking In...

The Retreat’s Lead Yoga Instructor, Sarah Yukie Gingrich, was the first to arrive and made herself thoroughly at home in her beautiful villa. The other attendees soon arrived, ready for a wonderful pre-sunset yoga class to welcome them to Jamaica. The theme of the class was “Connecting to Space,” and yogis were treated to a gentle, grounding practice—a fabulous way to commence the Inner Peace week.

  

Chilling, Relaxing and Eating

The following day, breakfast was a lovely spread of healthy Caribbean fare as well as in-season, fresh fruit. After a yoga class led by Sarah and based on connecting to one’s roots, attendees relaxed and enjoyed the beach.

  

Farmer’s Market Tour

After a few more yoga classes, everyone really started to get their “Inner Peace” groove on. For a holistic approach to wellness, the yogis headed to the local Farmer’s Market with Chef Maurice to purchase in-season ingredients. They sipped fresh coconut water, sampled various fruits and chatted with local farmers. After the tour, attendees returned to the hotel and were treated to a special cooking show à la Chef Maurice himself! Of course, tasting was encouraged and everyone enjoyed the fabulous Jamaican delights that Chef whipped up.

Konoko Falls

On the final day, the group visited the fabulous and recently renovated attraction, Konoko Falls in Ocho Rios. A must-see when you are here, the expansive property encompasses a beautiful waterfall. After a guided tour, yogis chilled with refreshing juices and sat down to a picnic-style Jamaican lunch of jerk chicken, festival and escovitch fish. Our General Manager Kyle even got in on the fun – holding a pet snake!

  

After the retreat’s last relaxing yoga class, everyone got together at the lovely villa next door for dinner al fresco. Each yogi sent their personal wishes out to the universe as they released a glowing sky lantern to the star-lit sky.

We want to thank Sarah for hosting such a wonderful retreat and sharing her lovely photos with us. We hope to welcome her again soon for more Inner Peace In Paradise. In fact, our yogis enjoyed their time at The Inn so much that they are already talking about next year!
